These carrot cake cupcakes are moist, soft, and very easy to make! It makes a perfect treat with velvety and fluffy cream cheese frosting. I’m showing how to make it step by step!

📌 Ingredients For Carrot Cake
For 12 cupcakes
Cake Batter 
 • All-purpose flour - 140 g (1 1/8 cups)
 • Granulated sugar - 150 g (3/4 cup)
 • Baking powder - 3/4 tsps 
 • Baking soda - 1/2 tsp
 • Salt - 3/8 tsp (1/4 + 1/8 tsps)
 • Cinnamon - 1 tsps
 • Nutmeg - 1/4 tsp 
 • Egg - 75 g (1.5 eggs)
 • Oil - 115 g (1/2 cup)
 • White Vinegar - 15 g (1 Tbsp)
 • Hot milk - 90 g (3/8 cup or 1/3 cup + 1/2 Tbsp)
 • Toasted pecans - 60g (1/2 cup) *Bake at 330ºF (165ºC) for about 10 minutes until lightly browned.
 • Raisins - 35g (1/4 cup) *Optional*
 • Carrot (Finely shredded) - 120 g (1 cup)

Bake (Preheated) at 330ºF (165ºC) for about 20 minutes until the toothpick comes out clean when inserted in the center. (It takes 18 - 19 minutes for 12 cupcakes with my oven.)

Cream Cheese Frosting
 • Powdered sugar - 125 g (1 cup)
 • Salt - a pinch
 • Unsalted butter (Softened) - 113 g (1 US stick)
 • Full-fat cream cheese - 113 g (1/2 US block)

This carrot cake recipe is so moist, soft, and not overly sweet. You can make it in easy steps! Frost it with velvety cream cheese frosting to complete the classic cake. I’m showing how to make it step by step!

📌 Ingredients For Carrot Cake
(for a 8-inch cake)
Cake Batter 
 • All-purpose flour - 280 g (2 1/4 cups)
 • Baking powder - 1 1/2 tsp
 • Baking soda - 1 tsp
 • Salt - 3/4 tsp 
 • Granulated sugar - 300 g (1 1/2 cups)
 • Cinnamon - 2 tsp
 • Nutmeg - 1/2 tsp 
 • Egg - 150 g (3 eggs)
 • Oil - 230 g (1 cup)
 • White vinegar - 30 g (2 Tbsps)
 • Hot milk - 180g (3/4 cup)
 • Carrot - 240 g (2 cups)
 • Toasted pecans - 120g (1 cup) *Bake at 330ºF (165ºC) for about 15 minutes until lightly browned.
 • Raisins - 70g (1/2 cup)

Bake (Preheated) at 330ºF (165ºC) for about 35 minutes until a toothpick comes out clean when inserted in the center.

 • Powdered sugar - 250 g (2 cups)
 • Salt - 1/8 tsp
 • Unsalted butter - 226 g (2 US sticks)
 • Full-fat cream cheese - 226 g (1 US block)

BEST Chocolate Mousse Recipe (Airy & Silk-Smooth!)

I'm sharing how to make perfect chocolate macarons step by step. I love making macarons with the Italian method, using Italian meringue. The surface of the macarons is so shiny and smooth, and the shells get fluffier and thicker. I added a good amount of cocoa powder to the macaron batter, which makes these macarons perfectly chocolatey. No doubt, the best chocolate macarons I've ever had! 

[Ingredients For Chocolate Macarons]
For 24 - 28 macarons (48 to 56 macaron shells - 2-inch wide after baked * Pipe smaller as they spread more after piping.)

Macaron batter
 • Egg white - 60 g (2 medium eggs)
 • Almond flour - 150 g (1 1/2 cup)
 • Powdered sugar - 120 g (1 cup)
 • Cocoa powder - 24 g (4 Tbsps)
 • Egg white - 60 g (2 medium eggs)
 • Water - 45 g (3 Tbsps)
 • Granulated sugar - 150 g (3/4 cup)

Meringue: Heat the syrup to 118ºC (244ºF).
Macaron shells: Bake (Preheated) at 300ºF (149ºC) for about 20 mins for 2-inch wide macaron shells.

Chocolate Ganache Filling
 • Dark chocolate (Melted and warm) - 170 g (1 coarsely chopped dark chocolate)
 • Heavy cream (Cold) - 180 g (3/4 cup)
 • Butter (Softened) - 28 g (2 Tbsps)

For 4 4-oz glass cups
 • Dark chocolate - 56 g (1/4 cup coarsely chopped dark chocolate)
 • Whole milk - 180 g (3/4 cup)
 • Heavy cream - 80 g (1/3 cup)
 • Vanilla beans - 1/4 pod
 • Egg - 1 egg
 • Yolk - 1 yolk
 • Granulated sugar - 24 g (2 Tbsps)

Bake at 300ºF (149ºC) for 30 - 40 minutes with a water bath until the surface giggles slightly like jello/jelly or custard pudding. 

Whipped cream topping:
 • Heavy cream - 60 g (1/4 US cup)
 • Granulated sugar - 4 g (1 tsp)

For Piped Dough
 • The base dough - 200 g
 • Milk -  10 g (2 tsp)

For Gingerbread Dough
 • The base dough - 100 g
 • Cinnamon - 1/2 tsp
 • Ginger - 1/2 tsp
 • Clove - pinch
 • All-purpose flour - 8 g (1 Tbsp)
 • Molasses - 15 g (3/4 Tbsp)

For Decorations
* You can omit some or change different ingredients as you like!
 • Marshmallows (for Santa bear cookies)
 • Sprinkles (for Christmas wreath and tree cookies)

Contrary to popular belief, Lorem Ipsum is not simply random text. It has roots in a piece of classical Latin literature from 45 BC, making it over 2000 years old. Richard McClintock, a Latin professor at Hampden-Sydney College in Virginia, looked up one of the more obscure Latin words, consectetur, from a Lorem Ipsum passage, and going through the cites of the word in classical literature, discovered the undoubtable source. Lorem Ipsum comes from sections 1.10.32 and 1.10.33 of “de Finibus Bonorum et Malorum” (The Extremes of Good and Evil) by Cicero, written in 45 BC. This book is a treatise on the theory of ethics, very popular during the Renaissance. The first line of Lorem Ipsum, “Lorem ipsum dolor sit amet..”, comes from a line in section 1.10.32.

The standard chunk of Lorem Ipsum used since the 1500s is reproduced below for those interested. Sections 1.10.32 and 1.10.33 from “de Finibus Bonorum et Malorum” by Cicero are also reproduced in their exact original form, accompanied by English versions from the 1914 translation by H. Rackham.
