• ½ cup fresh parsley
Liquids:
• 8–10 cups of water
• 3–4 tablespoons olive oil
Seasonings:
• 3 tablespoons salt (for water)
• Additional salt (for seafood)
• Pepper, to taste
• 3 bay leaves
• 7 whole peppercorns
Fats:
• 3 tablespoons butter
Seafood (choose your favorites):
• Octopus
• Fish
• Shrimp
• Crab meat
• Scallops
Optional:
• Crusty bread for serving

1. Prepare the Vegetables:
• Cut 4 large potatoes into cubes.
• Slice 2 large carrots into even rounds.
• Thinly slice 1 large onion and 2 stalks of celery.

• In a large pot, bring 8–10 cups of water to a boil.
• Add 3 tablespoons of salt, 3 bay leaves, and 7 peppercorns to the water.
