I hope you all had an amazing holiday season and a wonderful 2024. This year has been a rollercoaster, but I am so grateful for all the yummy food, adventures, and core memories I made.

This was the first holiday season without my dad, and honestly, at first, I thought maybe I’d just order takeout, curl up, and let the day pass quietly. But then I thought about my dad, he loved food—not just eating it, but everything it represented. He believed that every shared bite at a table was a little moment of connection, love, and gratitude. So I decided to cook up a 6-course dinner and the brunch of my dreams because it’s my way of bringing his love for food and family into this season, even if he’s not physically here.

Hi friends ~ Welcome back to another episode of What I Eat in a Week!

HAPPY HOLIDAYS!! I hope you are all enjoying time with loved ones and having tons of yummy treats. This week was full of cooking, reading, and a whole lot of fun! First up, I'm making 200 delicious spring rolls to share with my friends and family. It brought me so much joy dropping these off and seeing people’s reactions!

For this week’s date night, Dom and I visited a highly recommended Korean restaurant and explored a Christmas Village that was set inside a film set! Dom then surprised me with the 1 Minute Shopping Challenge at the bookstore which was so hectic but so much fun.

Hi friends ~ Welcome back to another episode of What I Eat in a Week!

I can’t believe it's already the middle of December. The holiday season and cozy nights have been bringing so much joy and I am so grateful for all the memories that were created this week.

I have continued reading the Throne of Glass series and it is just getting better! Comment below if you’ve read this series and your thoughts. This week was of course filled with delicious food, we started off with a delicious pot of Filipino Congee followed up with a savoury bowl of Braised Pork Belly paired with Egg Fried Rice and Bok Choy. The next day, I made the ultimate sandwich with homemade pesto and burrata, and for dinner I made a fan favorite Galbi Jin and ended the night by wrapping up some dumplings with my mom.

We started the weekend early with our annual Christmas Market date night, there was so much yummy food and cute holiday shops to look at. We ended the week by surprising my friend and I’s husbands with Canucks tickets!

Hi friends ~ Welcome back to another episode of What I Eat in a Week!

The holidays are right around the corner, and things have been feeling hectic, so this week, I decided to take it easy and cook up some of my favorite cozy meals.

There is nothing better than warm soup and stews during this time of the year. I cooked up my go-to egg drop soup and dumplings, Korean Army Stew, Kimchi Tofu Stew, Spicy Cheesy Rice Cakes, and Crispy Pork Chops and noodles.

For date night, Dom and I visited the Burnaby Village Museum and Garden Works which was super cozy and festive. I then went on a girl's date in Fort Langley, which is always such a fun time.

Hi friends, welcome back to a special episode of Tiffy Cooks!

Today, we are turning my home into a mini cafe to show appreciation for 22 of my favorite people. I have been obsessed with matcha lately,y and the cold weather had me feeling like baking something, so my mom and I got together and designed a menu with delicious drinks, baked goods, and small bites.

This mini cafe took us 3 days to prepare. On the first day, we tested all of the baking recipes. Baking has always intimidated me, but thankfully my mom is an amazing baker! We tested out a few butter shortbread cookies and cinnamon rolls.

On the second day, we prepared all the syrups. I made strawberry, ginger, and lemon syrup. These are so useful to have in the fridge to spice up any drink of your choice.

On the third day, we perfected all of the recipes! We ended up making cinnamon buns, matcha cookies, almond cookies, chocolate swirl cookies, tomago sando, chicken salad sandwich, pesto pasta salad, and creamy sesame chicken salad. We also made 5 different drinks, matcha latte with cold foam, strawberry matcha latte, lemon tonic, ginger tea, and matcha lemon tonic.

Hi friends ~ welcome back to another vlog!

HOW IS IT ALREADY THE END OF NOVEMBER? This year has been flying by and to say it's been a rollercoaster is an understatement. Lately, I have been making an effort to try new things and live in the moment, and this week was definitely full of these new and exciting moments that I will remember forever.

We started off the week by visiting a spot that I used to visit with my dad all the time. Walking around the pier was so peaceful and nostalgic. The next day after I packed for my trip, Dom and I went to the Usher concert which was one of the best concerts I've ever been to! On friday we were getting ready to head to the airport, but first, I had to get my haircut! It’s been so long since I’ve cut my hair, and I would have never done this right before a flight. But this haircut blew me away, and I am so happy I took the risk.

Then, we headed off to Vegas!! This was my first trip away from my family and Dom, and I was pretty nervous. But this weekend with my girlfriends was so special. Laughing, crying, partying, and enjoying delicious food with these girls really made me take a moment to appreciate life.

Hi friends ~ welcome back to another What I Eat in a Week!

With the colder weather quickly coming upon us, I have been trying to do more “cozy activities” with my friends and family. I don't know about you, but starting the day with rice and eggs while watching Gilmore Girls has been the ultimate way to start my day.

If you haven't done paint night with your friends, I highly recommend it. It is cozy, funny, and it created so many core memories for us! We ended the week with a nice dinner with my family. I can’t believe it’s already November, time really flies. This week, as always, was packed with yummy food, time with loved ones, and a road trip to Seattle for the football game!!!

I have been working extra hard to try new things and do things that make me happy lately. That means going for more walks, watching new shows like Gilmore Girls (SO GOOD), morning matcha, and testing out new ingredients in the kitchen. Who knew spaghetti squash and cottage cheese pancakes were so delicious?

We ended the week with an amazing trip to Seattle to watch the football game. If you didn’t know, Dom is a huge football fan, so I wanted to surprise him with this trip to show how grateful I am for his support and being my rock.
