Today, we make a very fresh and easy Italian bruschetta! This recipe can me easily adjusted to your liking. If you want to save calories by adding less olive oil, you can do that! If you have a date and you’re worried about your breath, feed them this dish then you both will have the same delicious garlic breath...perfect for kissing!

For the bruschetta:
3 vine ripened tomatoes or 
1.5 cups of diced tomatoes of your choice 
1/2 small red onion or 
1/4 cup of small diced red onion
3-4 fresh basil leaves, chiffonade (cut in thin strips or just torn) same some for garnish
2 tbsp shaved Parmesan
Salt and pepper to taste
Around 3 tbsp extra virgin olive oil

1. Mix everything in a bowl and set aside.
Save some basil and Parmesan on the side to garnish the top


1/4 of a baguette  (more or less depending on how much topping you put) 
Extra virgin olive oil
Salt and pepper
1 garlic clove

1. Slice baguette about 1/2 an inch 
2. Brush with olive oil season with salt and pepper and toast on a pan or bake at 350F for 12-15 min
3. Rub each piece with the clove of garlic
4. Top with tomato mixture right before serving 

We used a store bought balsamic reduction to drizzle on the top, but that is totally optional. You can easily make your own reduction by simmering balsamic vinegar on a stove until syrup consistency; however it takes a long time
